I love popcorn but I have never tried flavored popcorn so I will definitely give this a shot!
We hope you give it a try!
Many years ago, there was a store that sold flavored popcorn. Blueberry was my favorite. Going to make some with my granddaughter. LorAnn is the only brand I trust. I have made hard candy and taffy and now will try popcorn 😀
Blueberry popcorn must have been such a fun treat, and how special that you’re going to make it with your granddaughter. What a sweet way to pass along a favorite treat and make new memories together!
Your other articles talk about adding lecithin to caramel, but I cannot find any recipes for caramel corn (or something similar) that includes lecithin.
Hi Mark! Here is one of our recipes:
Ingredients:
10 cups popped corn (3/4 cup unpopped kernels)
4 oz brown sugar (about 1/2 cup packed)
5.5 oz Corn syrup (about 1/3 – 1/2 cup)
4 oz water (1/2 cup)
2.5 oz total Butter (split)
0.2 oz Lecithin (about 1.5 to 2 tsp)
1 tbsp oil
1 tsp salt
1 tsp baking soda
Recipe:
1. Pop the Corn: Pop your kernels using an air popper or stovetop method, then transfer the popped corn into a large, heat-safe mixing bowl. Discard any unpopped kernels.
2. Boil the Sugar Base: In a heavy saucepan, combine the granulated sugar, brown sugar, corn syrup, and water. Cook over medium-high heat, stirring until the sugar dissolves, then bring to a boil without stirring until it reaches 240°F (115°C).
3. Add Initial Butter: Stir in a portion of the butter and continue cooking until the mixture reaches 300°F (149°C) (hard-crack stage).
4. Finish the Caramel: Remove the pot from the heat. Carefully stir in the salt and the baking soda (it will bubble up and foam significantly).
5. Prepare the Lecithin Blend: In a small separate container, melt the remaining butter, mix in the oil, and thoroughly stir in the lecithin until smooth.
6. Combine and Coat: Pour the hot caramel and the butter-lecithin mixture over the popped corn. Toss quickly and thoroughly with a heat-resistant spatula or wooden spoon so every kernel is evenly coated without clumping.
7. Cool and Store: Spread the caramel corn out on parchment paper or a baking sheet to cool completely. Store in an airtight container to keep it fresh and crisp.
